Bada Bing Shrimp

Ingredients

  • 2 lb large shrimp, peeled and deveined
  • 1 1/2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 cup cornstarch
  • Oil spray or oil, for cooking
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha
  • 1 tbsp lime juice
  • 1 tsp rice vinegar
  • 1 small garlic clove, finely grated
  • 1 tsp honey or hot honey, optional
  • Pinch of salt
  • Basmati rice, for serving
  • Green onions, sliced, for garnish

Method

  1. Dry the shrimp

    Pat the shrimp very dry with paper towels. Dry shrimp helped the light cornstarch coating adhere evenly.

  2. Season and coat

    In a large bowl, toss the shrimp with kosher salt, garlic powder, paprika, black pepper, and cornstarch until each shrimp is lightly coated. Toss only until coated so the shrimp remain separate rather than clumping together.

  3. Prepare for air frying

    Arrange the coated shrimp in a single layer in the air-fryer basket and spray lightly with oil. Cook in batches if needed rather than crowding the basket.

  4. Air fry the shrimp

    Air fry at 400°F for 7 to 9 minutes, shaking the basket halfway through. The shrimp were done when lightly crisp, opaque throughout, and just cooked; avoid continuing once they are opaque.

  5. Whisk the sauce

    While the shrimp cooks, whisk the mayonnaise, sweet chili sauce, sriracha, lime juice, rice vinegar, grated garlic, optional honey or hot honey, and a pinch of salt in a bowl until smooth and fully combined.

  6. Serve

    Serve the cooked shrimp over basmati rice. Drizzle the sauce over the top to keep more of the coating crisp, or toss the shrimp in the sauce for full coverage. Finish with sliced green onions.
