Bada Bing Shrimp is all about the contrast between lightly crisp shrimp and a creamy sauce with sweet chili heat, sriracha, lime, and garlic. A small amount of cornstarch gives the shrimp a delicate coating without making it heavy.

The recipe includes two cooking options. Air fry the shrimp at 400°F for 7 to 9 minutes, shaking halfway through, or pan sear it over medium-high heat for about 2 minutes per side. Either way, stop as soon as the shrimp is opaque and just cooked.

Whisk the sauce until smooth, then choose the finish you like best. Tossing the shrimp gives every piece full coverage. Drizzling the sauce over the top keeps more of the coating crisp. Serve it over basmati rice and finish with sliced green onions, cilantro, lime wedges, or sesame seeds. Crispy roasted broccoli, pickled cucumbers, lime cabbage slaw, and lettuce wraps all work well alongside it.

The method

How to make it

  1. 1

    Dry the shrimp

Pat the shrimp very dry with paper towels. Dry shrimp helped the light cornstarch coating adhere evenly.

  2. 2

    Season and coat

In a large bowl, toss the shrimp with kosher salt, garlic powder, paprika, black pepper, and cornstarch until each shrimp is lightly coated. Toss only until coated so the shrimp remain separate rather than clumping together.

  3. 3

    Prepare for air frying

Arrange the coated shrimp in a single layer in the air-fryer basket and spray lightly with oil. Cook in batches if needed rather than crowding the basket.

  4. 4

    Air fry the shrimp

Air fry at 400°F for 7 to 9 minutes, shaking the basket halfway through. The shrimp were done when lightly crisp, opaque throughout, and just cooked; avoid continuing once they are opaque.

  5. 5

    Whisk the sauce

While the shrimp cooks, whisk the mayonnaise, sweet chili sauce, sriracha, lime juice, rice vinegar, grated garlic, optional honey or hot honey, and a pinch of salt in a bowl until smooth and fully combined.

  6. 6

    Serve

Serve the cooked shrimp over basmati rice. Drizzle the sauce over the top to keep more of the coating crisp, or toss the shrimp in the sauce for full coverage. Finish with sliced green onions.

Another way to cook it

No air frying? You still have options.

Pan-searedMedium-high heatAbout 4 minutes total

Heat a large skillet over medium-high heat and add enough oil to coat the cooking surface. Arrange the coated shrimp in a single layer without crowding the pan. Cook for about 2 minutes per side, until just opaque throughout, then serve with the sauce drizzled over the top or toss for full coverage.
